The milk from Water Buffalo is usually made into curd, which is somewhat like yogurt. Buffalo curd is never refrigerated but always eaten fresh, usually on the day it is made. It is often served with a little palm syrup poured on top. This syrup is made by boiling down the sap ("toddy") of the coconut palm. It takes 10 units of palm toddy to make one unit of palm syrup. (It takes 40 units of maple sap to make one unit of maple syrup.)
