Preserving eggs for a long time at sea is a challenge. There are several techniques which cruisers try and one of the standard methods is to coat each shell with Vaseline. This apparently keeps the inside from drying out. The eggs need to be turned occasionally too. Nina preserved 270 eggs this way in Galle and we still were using some in Madagascar more than five months later.
